Oven Baked Spaghetti Squash

Preheat your oven to 400 degrees. Cut squash in 2, the long way. Down the middle. (Careful! this can be tough and cause an accident) Scoop the guts (seeds) out. Drizzle a little olive oil on the inside – then season however you like. I use salt, garlic powder, and sometimes an all seasoning blend. I also put a little oil on the outside of each half.

Place OPEN SIDE DOWN on a foil lined baking sheet. Bake for 45 minutes or until the inside comes loose easily with a fork. Put some butter in the center before you use a fork to get all the good “spaghetti” detached from the sides. Delish!

We serve them with seasoned ground meat inside, or just parmesan cheese. You can put anything in it you want! Full of nutrients, filling and flavorful. -Jodi
